Ingredients
  

For the Taco Cupcakes:

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • Sour cream for topping

Optional Toppings and Garnishes:

  • Sliced jalapeños
  • Chopped cilantro
  • Avocado slices

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef until browned. Stir in the taco seasoning and mix well.
  • In a mixing bowl, combine cornmeal, all-purpose flour, baking powder, eggs, and milk. Stir until smooth.
  • Gently fold in the cooked beef, shredded cheese, and salsa into the batter.
  • Spoon the mixture into cupcake liners, filling each about two-thirds full.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cupcakes cool for 10 minutes before serving.
  • Top with sour cream, jalapeños, cilantro, or avocado slices.

Notes

For a vegetarian version, replace ground beef with a mix of black beans, corn, and diced bell peppers.
To make them spicier, add diced jalapeños or extra taco seasoning.
