Ingredients
  

For the Birria:

  • 2 lbs beef or lamb
  • 4-6 dried chilies variety as per taste
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups water or beef broth

For the Pizzabirria Assembly:

  • 4-6 tortillas for pizza base
  • 2 cups shredded cheese Mexican blend or mozzarella
  • 1/4 cup fresh cilantro chopped, optional
  • 1/2 cup reserved birria broth for dipping

Optional Ingredients:

  • 1/2 teaspoon red pepper flakes for heat
  • 1/4 cup diced bell peppers or mushrooms
  • 1 teaspoon Worcestershire sauce

Instructions
 

  • **Prepare the Birria:** Soak the dried chilies in hot water for 15 minutes. Blend them with garlic, onion, and spices until smooth.
  • **Cook the Meat:** In a large pot, add the beef or lamb and pour the blended mixture over it. Add water or broth to cover. Simmer for 2-3 hours until tender.
  • **Shred the Meat:** Remove the meat from the pot and shred it with two forks. Reserve some of the broth for dipping.
  • **Assemble the Pizzabirria:** Preheat the oven to 450°F (230°C). Lay out tortillas and spread shredded meat, cheese, and optional ingredients on top.
  • **Bake:** Place assembled tortillas on a baking sheet and bake for 10 minutes until cheese is melted and tortillas are crispy.
  • **Serve:** Serve hot with a side of the reserved birria broth for dipping.

Notes

For a vegetarian version, replace the meat with mushrooms, jackfruit, or lentils.
Experiment with different cheeses like Oaxaca or pepper jack for added flavor.
Pair with Mexican street corn or guacamole for a full meal.
