Ingredients
  

For the Pineapple Casserole:

  • 2 cups crushed or chunked pineapple
  • 1 cup sugar
  • 1/2 cup butter melted
  • 1 cup shredded sharp cheddar cheese
  • 1 cup crushed crackers Ritz or saltines

Optional Ingredients:

  • 1/2 cup chopped pecans or walnuts for extra crunch
  • 1/4 cup shredded coconut for a tropical twist
  • 1/4 teaspoon cinnamon for added warmth

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Drain any excess juice from the pineapple.
  • In a large mixing bowl, combine pineapple, sugar, and melted butter. Stir well.
  • Gently fold in the shredded cheddar cheese.
  • In a separate bowl, mix crushed crackers with a little melted butter for added flavor.
  • Pour the pineapple mixture into a greased baking dish and spread the cracker mixture evenly on top.
  • Bake for about 30 minutes, or until the top is golden brown and bubbly.
  • Let it rest for a few minutes before serving.

Notes

Use fresh pineapple for enhanced flavor.
For a savory version, add diced ham or bacon.
Pairs well with grilled meats, roasted vegetables, or buttery dinner rolls.
