Ingredients
  

For the Salad Base

  • 1 can Black Beans rinsed and drained
  • 1 can Cannellini Beans rinsed and drained
  • 1 can Garbanzo Beans rinsed and drained

Fresh Vegetables

  • 1 cup Cherry Tomatoes halved
  • 1 Bell Pepper chopped
  • 1/2 cup Artichoke Hearts chopped

Extras

  • 1/4 cup Sun-Dried Tomatoes
  • 1/4 cup Kalamata Olives pitted
  • Fresh Parsley chopped, to taste

For the Dressing

  • 3 tbsp Wine Vinegar
  • 4 tbsp Olive Oil
  • Black Pepper & Pepper Flakes to taste

Instructions
 

  • Step 1: Rinse and Drain
    Rinse all canned beans under cold water and drain well. Place them in a large mixing bowl.
  • Step 2: Prepare the Vegetables
    Halve the cherry tomatoes, chop the bell pepper, and roughly chop the artichoke hearts. Add them to the bowl with the beans.
  • Step 3: Add Extras
    Add sun-dried tomatoes, Kalamata olives, and chopped fresh parsley to the bowl.
  • Step 4: Dress the Salad
    In a small bowl, whisk together the wine vinegar and olive oil. Pour over the salad and toss gently to combine. Season with black pepper and pepper flakes to taste.
