Ingredients
  

For the Meatloaves:

  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped parsley
  • 3 cloves garlic minced
  • 1 large egg beaten
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup milk
  • 1 tablespoon olive oil

Optional Ingredients:

  • 1/2 teaspoon red pepper flakes for spice
  • 1 teaspoon Worcestershire sauce for added depth
  • 1/2 cup grated mozzarella cheese for extra cheesiness

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, parsley, garlic, beaten egg, oregano, salt, and black pepper.
  • Add the milk and mix until the mixture is smooth and moist.
  • Divide the mixture into four equal portions and shape them into mini meatloaves. Place them on the prepared baking sheet.
  • Drizzle olive oil over the tops to create a crispy, golden crust while baking.
  • Bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  • If using mozzarella cheese, sprinkle it on top during the last 5 minutes of baking.
  • Let the meatloaves rest for a few minutes before serving.

Notes

For a gluten-free version, substitute breadcrumbs with almond flour or gluten-free breadcrumbs.
For a low-carb option, omit the breadcrumbs and add an extra egg for binding.
Serve with mashed potatoes, roasted vegetables, or a fresh green salad.
