Ingredients
  

For the Chili:

  • 1 lb ground beef or turkey/chicken
  • 1 can 15 oz kidney beans (drained and rinsed)
  • 1 can 15 oz black beans (drained and rinsed)
  • 1 large onion chopped
  • 1 bell pepper any color, chopped
  • 3 cloves garlic minced
  • 1 can 28 oz diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and black pepper to taste
  • 1 cup beef broth or water

Optional Ingredients:

  • 1/2 teaspoon red pepper flakes for spice
  • 1 diced jalapeño for extra heat
  • 1/2 teaspoon cinnamon for a hint of warmth
  • 1 tablespoon Worcestershire sauce for added depth
  • 1 cup corn for sweetness

Instructions
 

  • Prepare Ingredients: Chop the onion, bell pepper, and garlic.
  • Cook the Meat: In a large pot over medium heat, brown the ground beef. Drain excess fat if necessary.
  • Sauté Vegetables: Add chopped onion, bell pepper, and garlic. Sauté for 5 minutes until softened.
  • Add Spices: Stir in chili powder, cumin, paprika, oregano, salt, and pepper.
  • Simmer: Add diced tomatoes, kidney beans, black beans, and beef broth. Bring to a simmer.
  • Cook: Cover and let simmer for at least 30 minutes, stirring occasionally.
  • Serve: Enjoy with cornbread, rice, or tortilla chips. Add toppings like shredded cheese, sour cream, or fresh cilantro.

Notes

For a vegetarian version, swap the meat for extra beans or lentils.
Chili tastes even better the next day—store leftovers in the fridge for up to 4 days.
For a thicker consistency, let it simmer uncovered.
