Ingredients
  

  • 2 lbs boneless skinless chicken breast
  • 2 cans 15 oz each white beans (cannellini or great northern)
  • 1 can 4 oz diced green chilies
  • 4 cups chicken broth
  • 1 block 8 oz cream cheese

Optional Ingredients

  • Garlic powder, cumin, onion powder, salt, and pepper to taste
  • Shredded cheese, fresh cilantro, avocado slices, sour cream for garnish

Instructions
 

  • Prepare the Ingredients:Drain and rinse the white beans. Dice the chicken breast into smaller chunks if desired.
  • Add to Crockpot: Place the chicken, white beans, green chilies (with juice), and chicken broth into the slow cooker.
  • Add Cream Cheese: Cut the cream cheese into cubes and place on top.
  • Cook: Cover and cook on **low for 6 hours** or **high for 3 hours**.
  • Shred the Chicken: Once cooked, shred the chicken using two forks and stir everything together.
  • Serve & Garnish: Serve warm and top with shredded cheese, fresh cilantro, avocado, or sour cream.

Notes

- You can add more spice with extra green chilies or a dash of hot sauce.
- If you prefer a thicker chili, mash some of the beans before serving.
