Ingredients
  

For the Pepper Steak:

  • 1.5 lbs flank steak thinly sliced
  • 2 bell peppers any color, sliced
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1/4 cup soy sauce
  • 1 cup beef broth
  • Optional Ingredients:
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon red pepper flakes for heat

Instructions
 

  • Prepare the ingredients: Slice the flank steak into thin strips. Cut the bell peppers and onion into slices, and mince the garlic.
  • Layer in the Crock Pot: Place the sliced beef at the bottom of the slow cooker. Add the onions, garlic, and bell peppers on top.
  • Add the liquid: Pour the soy sauce and beef broth over the ingredients.
  • Cook: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until the beef is tender.
  • Serve: Enjoy over rice or with steamed vegetables.

Notes

For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the Crock Pot 30 minutes before serving.
Pair with white rice, brown rice, or mashed potatoes.
To make it spicy, add red pepper flakes or diced jalapeƱos.
