Ingredients
  

For the Muffins:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup milk
  • 1/4 cup unsalted butter melted
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Topping:

  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter melted

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a muffin tin with liners or grease it lightly.
  • In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  • In a separate bowl, mix milk, melted butter, oil, eggs, and vanilla extract until well combined.
  • Gradually fold the wet ingredients into the dry ingredients, stirring until just combined.
  • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  • While muffins are cooling slightly, prepare the cinnamon sugar topping by mixing sugar and cinnamon in a small bowl.
  • Dip the tops of the warm muffins in melted butter, then coat them with the cinnamon sugar mixture.
  • Serve warm and enjoy!

Notes

For extra flavor, add a pinch of nutmeg or a splash of maple syrup to the batter.
These muffins store well in an airtight container for up to three days or can be frozen for later enjoyment.
Pair them with a hot cup of coffee or tea for the perfect breakfast or snack.
