For the Chicken Potato Soup:

  • 2 boneless skinless chicken breasts or thighs (diced)
  • 3 medium potatoes peeled and cubed
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1/2 cup heavy cream optional, for creamier texture
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme fresh or dried
  • 1 tablespoon olive oil for sautéing

Optional Ingredients:

  • 1/2 teaspoon red pepper flakes for heat
  • 1/2 cup chopped spinach or kale for added nutrition
  • 1 tablespoon butter for extra richness

Instructions
 

  • Prepare Ingredients: Chop the vegetables, mince the garlic, and cube the potatoes and chicken.
  • Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery. Cook for about 5 minutes until softened.
  • Add Garlic and Chicken: Stir in the minced garlic and diced chicken. Cook for 5-7 minutes until chicken is lightly browned.
  • Simmer with Broth: Pour in the chicken broth and add the potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
  • Creamy Finish (Optional): Stir in the heavy cream and simmer for an additional 5 minutes for a richer texture.
  • Serve: Ladle the soup into bowls and garnish with fresh herbs if desired.

Notes

For a thicker soup, mash some of the potatoes before serving.
For a dairy-free version, skip the heavy cream or use coconut milk.
