Ingredients
  

For the Breakfast Taquitos:

  • Small tortillas corn or flour
  • 4 large eggs
  • 1/2 cup shredded cheese cheddar, Monterey Jack, or Mexican blend
  • 1/2 cup cooked bacon sausage, or diced ham
  • 1/4 cup diced bell peppers or onions optional
  • Salt and black pepper to taste
  • 1/2 tsp smoked paprika or garlic powder optional
  • 1 tbsp butter or oil for cooking eggs
  • Vegetable oil for frying, if frying method is used

Optional Toppings and Dipping Sauces:

  • Salsa
  • Sour cream
  • Guacamole
  • Chopped cilantro
  • Sliced jalapeños

Instructions
 

  • Scramble the eggs: In a pan over medium heat, melt the butter or oil. Add eggs, season with salt, pepper, and optional spices, and scramble until just cooked. Remove from heat.
  • Prepare the fillings: Cook bacon, sausage, or ham if not already done. Dice bell peppers or onions if using.
  • Assemble the taquitos: Warm tortillas slightly to make them pliable. Lay a tortilla flat and place scrambled eggs, cooked protein, and shredded cheese along one edge.
  • Roll the taquitos: Carefully roll the tortilla tightly, keeping the filling inside. Place seam-side down to keep them from unrolling.
  • Cook the taquitos:
  • - **Frying Method**: Heat about 1 inch of oil in a skillet over medium heat. Fry taquitos seam-side down until golden brown, about 2-3 minutes per side.
  • - **Baking Method**: Preheat oven to 425°F (220°C). Place taquitos seam-side down on a baking sheet, lightly spray with oil, and bake for 15-20 minutes, flipping halfway through.
  • Serve hot with salsa, sour cream, or guacamole.

Notes

For a vegetarian option, replace the meat with sautéed mushrooms, black beans, or spinach.
For extra crunch, brush taquitos with oil before baking.
Make-ahead tip: Freeze assembled, uncooked taquitos and cook as needed.
