  • 1 block 8 oz feta cheese
  • 2 pints cherry tomatoes
  • 1/4 cup olive oil
  • 3-4 garlic cloves minced or whole
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 oz pasta penne, farfalle, or spaghetti
  • A handful of fresh basil leaves for garnish
  • 1/4 teaspoon red pepper flakes optional
  • Optional Add-Ins:
  • Zucchini spinach, or bell peppers for extra veggies
  • Grilled chicken shrimp, or chickpeas for protein
  • Sun-dried tomatoes for added depth of flavor

Instructions
 

  • **Preheat Oven:** Set your oven to 400°F (200°C).
  • **Prepare Baking Dish:** In a baking dish, combine cherry tomatoes, olive oil, garlic, salt, and pepper. Toss to coat.
  • **Add Feta:** Place the block of feta in the center of the dish and drizzle with a little more olive oil.
  • **Bake:** Place the dish in the oven and bake for 30 minutes, or until the tomatoes burst and the feta is soft and golden.
  • **Cook Pasta:** While the feta bakes, cook the pasta according to the package instructions. Drain and set aside.
  • **Mix Everything:** Remove the baking dish from the oven and mash the feta and tomatoes together to create a creamy sauce.
  • **Combine:** Add the cooked pasta to the dish and toss until evenly coated.
  • **Serve:** Garnish with fresh basil and enjoy!

Notes

For a spicier version, add red pepper flakes or diced jalapeños.
To make it gluten-free, use gluten-free pasta or spiralized zucchini.
A squeeze of fresh lemon juice can enhance the flavors.
