Ingredients
  

For the Banana Pancakes:

  • 2 ripe bananas mashed
  • 1 cup all-purpose flour or whole wheat flour
  • 1 large egg
  • 3/4 cup milk or almond milk
  • 1 tablespoon sugar optional
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon optional
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter or oil for cooking

Optional Toppings:

  • Fresh banana slices
  • Maple syrup
  • Chopped nuts walnuts or pecans
  • Chocolate chips
  • Greek yogurt

Instructions
 

  • In a mixing bowl, mash the ripe bananas until smooth.
  • In a separate bowl, combine flour, baking powder, cinnamon (if using), sugar, and salt.
  • In another bowl, whisk the egg, milk, and vanilla extract together.
  • Gradually mix the wet ingredients into the dry ingredients, stirring gently. Do not overmix; a few lumps are fine.
  • Heat a skillet or griddle over medium heat and lightly grease it with butter or oil.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  • Serve warm with your favorite toppings.

Notes

For gluten-free pancakes, use almond flour or a gluten-free flour blend.
For vegan pancakes, replace the egg with a flax egg (1 tbsp flaxseed meal + 2.5 tbsp water) and use plant-based milk.
For extra protein, add a scoop of protein powder to the batter.
